名廚食譜——雙色瓜炒三文魚丁
Fried Salmon with Melon Dice
材料Ingredients
三文魚扒300克salmon fillet300g
南瓜200克pumpkin200g
翠肉瓜1小個(約200克)zucchini 1(small, 200g)
蒜頭1粒garlic1clove
酒1湯匙wine1tbsp
鹽少許saltlittle

醃料Marinade
鹽1/4茶匙salt1/4tsp
糖1/4茶匙sugar1/4tsp
胡椒粉1/4茶匙pepper1/4tsp

芡汁Sauce
糖1/2茶匙sugar1/2tsp
鹽1/4茶匙salt1/4tsp
粟粉1茶匙corn flour1tsp
水5湯匙water5tbsps
麻油少許sesame oillittle
做法Method
1. 三文魚扒去皮及骨,切丁,用醃料拌勻。
Skin salmon and remove bones, cut into dice. Add marinade and mix well.
2. 南瓜去皮洗淨,切丁;翠肉瓜洗淨,切丁;蒜頭剁碎,混和芡汁材料備用。
Peel pumpkin, clean and cut pumpkin and zucchini into dice; crush garlic; prepare sauce

mixture.
3. 燒油1/2湯匙先炒翠肉瓜粒,灑少許鹽,炒約2分鐘後盛起。
Heat 1/2 tbsp oil, add a pinch of salt and stir fry zucchini dice for 2 minutes, dish up.
4. 燒油1/2湯匙放入南瓜粒略炒,加少許水蓋好煮3分鐘後盛起。
Heat 1/2 tbsp oil, stir fry pumpkin dice, add a little water and cook for 3 minutes, dish up.
5. 燒油1/2湯匙爆香蒜頭,放入三文魚丁煎炒片刻至完全轉色,贊酒,放入瓜粒炒勻後加入芡汁炒至濃稠上碟。
Heat 1/2 tbsp oil, stir fry garlic, add salmon dice and fry until golden brown, add wine, add pumpkin and zucchini dice and keep stirring, add in sauce mixture, stir well, dish up and serve hot.
